Potato Soup Recipe
Health Benefits of Potato Soup
Potato soup is not only comforting and delicious but also packed with nutritional benefits. Potatoes are an excellent source of vitamin C, potassium, and vitamin B6, which support immune function, heart health, and brain development.
When combined with colorful vegetables like corn, carrots, and peas, this soup becomes a powerhouse of fiber, antioxidants, and essential minerals.
The fiber content aids digestion and promotes gut health, while the natural creaminess of mashed potatoes provides a satisfying, low-fat alternative to dairy-based creams.
This light yet nourishing soup is perfect for children, elderly people, and anyone seeking a healthy, plant-based meal that warms the body and soul.
Ingredients
(1 cup corresponds to approximately 200 grams)
- 1/2 cup corn kernels
- 1 potato, diced
- 1/2 cup carrot, diced
- 1/4 cup peas (round peas, string beans, or green beans)
- 1/4 teaspoon sugar (can add a bit of cilantro/coriander and a few other spices)
Instructions
Peel and boil the potato in clean water until soft. Mash the potato thoroughly with 2 cups of water (If the soup is too thick, add water to thin it to about 70% consistency).
Pour this thick liquid into a pan (pot) and add the other ingredients. When it comes to a boil, add a little salt & pepper and serve hot.
Tips
This creamy soup can be eaten with spaghetti or rice and is good for children.
